       Hi coffee chatter family,

I know it is beautiful outside and birds are singing in full chorus but there is still a pandemic looming and we are hoping that you continue wearing mask and gloves until however long it takes ...until all of us are safe.  We need to see you Healthy, happy and creative  at our next coffee chatter gathering:)

This first week in May I discovered my neighbor who use to live in the apartments behind me, sleeping in his truck on one of the more beautiful streets in our neighborhood. I spotted his truck and stopped to see if he was ok.  I brought a sack lunch and water and we talked. I remembered he was a poet and he told me that he would love to share one with me about his situation as soon as he located his book. I am waiting on them:) and I promise to share. In the meantime , my hope is that all of us stop and give notice to the vulnerable. Conversation was sooo important to my friend and it only takes a moment! He wasn’t sick or mentally ill  and I don’t think he really cared about my stinking sandwich lunch bag ...but he did appreciate the time and the chatter!!  Be safe💋❤

   REOPENING

There is talk of reopening the economy. When and how is still being debated, but we are closer to the end of the quarantine than the beginning. This means that the movie business will get back online, and several productions may be afoot. This would be a great time to reevaluate our goals and our action plan to achieve these goals.

To truly make this work, we must be willing to invest time and effort. I find this is where many people fall short. Many people want to succeed and live their dreams, but they just do not want to put in the effort to achieve them. Do not be one of those people. If you have time on your hands due to the quarantine, use it. If not, make some time. Pen your ultimate goals on a piece of paper. From there, pen down smaller, more reachable goals that you can achieve in a couple of months, a year, or a couple of years. From there, write down what you will need to do to achieve each of these goals. When you are done, you have an action plan.

Of course, an action plan is just words on a paper unless you have the determination to make it happen. Thus, when movie production comes online, many of us will need regular jobs as well to pay the bills, and that can limit the time we can devote to our action plan. However, if you can make sure you do something every day to follow your action plan, then little by little, you can start reaching your goals. Of course, this is not easy, but nothing worth doing is easy. In the end, life will get back to normal, but we want to make the new normal a world where we are living our dreams.

      Vegan Mac and Cheese

INGREDIENTS

-Pasta (I use Gluten Free Brown Rice Pasta)

-Vegan Egg Replacement

-Vegan Cheese Shreds

-Non Dairy Milk (I use Almond Milk)

-Cashew Flour

-Nutritional Yeast

-Minced Garlic

-Salt and Pepper (Other Spices)

I  gotta be honest, I prepare my Mac and cheese according to taste. I don't use any particular measurements.

Prepare pasta and vegan egg mix (2 eggs) according to the instructions.

Drain and quickly rinse pasta

Mix in garlic, seasoning and vegan butter into warm pasta

Add cheese - a lot or a little

Add egg and almond milk.

How much of each item you put in depends on how much pasta you prepared, and how much cheese you put in it.

If you like it creamy and very moist, add more butter and almond milk. Mixture should not be soupy.

The egg is used to help hold everything together. If you don't care about it sticking together,  use less egg.
