Slowing things down for reflection and contemplation...

Be sure to take an extra listen to the two songs composed and self-recorded by Julien Chang '22!
Animals bark, sing, purr and even gesture, all fascinating but a far cry from human communication.

This is a great vegan comfort dish and one of Chef Brad's favorite Thanksgiving side dishes. It’s healthy, hearty, easy to prepare and it holds well. Also this time of year the potatoes and sprouts are at their best!

Brussel Sprouts - halved
Sweet Potatoes - peeled & cubed
Olive Oil
Balsamic Vinegar
Salt & Pepper
  • Preheat oven to 425 degrees
  • In a bowl toss halved sprouts and cubed potatoes with just enough olive oil to coat and salt & pepper to your liking
  • Spread evenly on a roasting pan and place in oven until cooked tender, about 20 minutes
  • While sprouts and potatoes are roasting whisk together 2 parts vinegar and 1 part honey with cinnamon, and turmeric to taste. You will need enough of this mixture to coat the potatoes and sprouts
  • Heat the vinegar to a boil and then simmer on low heat for about 8 minutes
  • Toss sprouts and potatoes with vinegar mixture and serve
