Cinnamon Pumpkin Seeds
1 ½ cups pumpkin seeds, cleaned and ideally dried overnight
3 tbsp butter, melted
2 tbsp brown sugar
1 tsp cinnamon
- Preheat oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- Melt the butter in a large mixing bowl and stir in the brown sugar and cinnamon. Add the seeds and coat thoroughly.
- Spread the seeds evenly on the parchment paper and bake until crispy.

From now through November 13, face off against your colleagues and friends in a battle to see who will be crowned the first ever Sustainability Trivia Champion of Princeton Undergraduates, Graduates and Faculty/Staff! Trivia will run weekly, Monday through Friday! Play whenever and wherever you want - phone, computer, on your bike, in your kayak, hammock, bed - this is not a Zoom event! Each week, players will be randomly selected to win ecofriendly prizes and at the end of the four weeks, three Sustainability Trivia Champions will be crowned and receive their choice of our fabulous GRAND PRIZES!
