Strawberry Rhubarb Pie 🥧
Tis' the season for it, so we thought we'd share a tried and tested recipe with you all!
Ingredients:
440g rhubarb stalks, chopped up
280g sliced strawberries
3/4 cup sugar
4 tablespoons cornflour
1/4 teaspoon salt
Finely grated zest of one orange
Your favourite pie dough - which honestly could be bought puff or shortcrust (Helen from Icecream Social uses Rose Levy Betanbaums flaky pastry recipe, which is worth the effort!)
Method:
Mix rhubarb and strawberry with zest and sugar. Leave to sit at room temp for a few hours until nice and juicy. Mix through cornflour. PUT IT IN A PIE THAT’S IT!!
Sidenote: It’ll take quite some time to cook… you gotta wait until thick juices are bubbling out of the slits in the pie top. Enjoy!
