Crazy Farm is one of two Northern Neck farms represented at the LRFM. Crazy Farms owner Sergio Izaguirre showed several LFRM Market Committee members around his farm and is eager to bring his fresh fruits and vegetables to Arlington tables.  Crazy Farm offers a huge variety of vegetables -- including salad greens of various types, heirloom tomatoes, squash, eggplant, peppers, potatoes, and corn -- and fruit -- including strawberries, blackberries, blueberries, melon, figs and peaches.  Crazy Farm also offers eggs and herbs (in bunches and pots).  Be sure to meet the Crazy Farm farmers on your next trip to the LRFM!

Kohlrabi, Beet, and Apple Salad with Feta and Lime

What is that lovely purple or green vegetable on the tables at the Crazy Farm booth?  It's a kohlrabi (sometimes called a German turnip).  Try it roasted with garlic and parmesan.  Or in this refreshing salad with other fresh farmers market finds.

Ingredients
  • 1 medium to large kohlrabi, peeled and finely shredded
  • 2 small to medium raw beets, peeled and finely shredded
  • 1 large apple, cored and cut into thin matchsticks (Pink Lady, Fiji, or similar)
  • 2 tablespoons parsley, minced
  • 2 green onions, chopped
  • 1 orange, juiced
  • 1 orange, zested
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • salt + pepper to taste
  • 1/4 cup toasted sunflower seeds
  • crumbled feta cheese (omit for vegan/dairy-free)

Directions
Place the shredded kohlrabi, shredded beets, chopped apple, parsley, and green onion in a large salad bowl. In a separate, smaller bowl, whisk together the orange zest, the orange and lime juice, olive oil and salt + pepper. Gently drizzle citrus dressing over the salad and toss to mix.

Sprinkle the salad with toasted sunflower seeds and crumbled feta cheese (if desired).
