Corn and Peaches!

Maybe not the best combination, but the Lubber Run Farmers Market is now featuring them both.  You choose whether to enjoy them separately or together!  Visit the produce vendors at the Market this Saturday at Barrett Elementary School in Arlington on Saturday, July 14, from 8:00 am to 12:00 pm, and pick your favorite summertime treat.  We'll see you at the Market!

Recipe of the Week
Easy Summer Favorites
Microwave Corn on the Cob

Did you know that corn on the cob is fantastic in the microwave?  Who needs to boil water?  Simply wet down the corn still in the husk, pop it in the microwave for two minutes or so, husk, and serve.  Or, before serving, coat the corn with a mixture of sour cream, mayonnaise, cotija or feta cheese, and chili powder for your own version of Mexican Street Corn.  So easy!

Grilled Peaches

Peaches are great on the grill!    Remove the pit and brush each cut side with olive oil. Grill cut-side down, over medium heat, for 4 to 5 minutes. Flip the peaches and cook until tender, 4 to 5 minutes.  Done!
