Welcome back Soroptimist!

I am very excited to get back to business. I am looking forward working with our great board and membership. Although we have to alter some projects, I believe we will be fine and successful working towards our mission. We have scheduled all meetings, at least until December, on Zoom.
For our first Speaker Meeting we will meet and celebrate this years Live your Dream Recipients.

"Thank you" to Linda Lucena for, once again, opening her home for our annual Membership Retreat and Planning Meeting on August 9th. Some of us came in person and some joined via Zoom! We came up with a great plan for the upcoming year!

On September 17th we will have another fun SUDS Meeting with SI Chico. This time we will meet on Zoom. Game Time!!!
Looking forward catching up with them.

SI Bidwell Rancho has expanded our Online store, offering now T shirts, Mugs and Masks. If you haven't yet, check them out when you get a chance.

Finally our hearts go out to everyone effected by the many wildfires in northern California.
I know the past weeks events have triggered many memories of the Carr and Paradise fires!

AVAILABLE ONLINE NOW!
 
Just a reminder that all workshop presentations are still online until the end of August. If you haven’t yet viewed them, don’t miss out. There is an abundance of great information to be shared. Once you view a session make sure to complete an evaluation form so we can gather your input. Your comments and suggestions are important to us and will assist in developing future retreats.
 
This is a unique opportunity for every member in the region to participate in SDR and we encourage you all to go to the region website at www.soroptimistsnr.org, click on the 2020 SDR tab, then the workshop tabs. Get comfortable, get curious and see how dreaming, learning, and doing can lead to the best Soroptimist experience yet!

Stronger Together

Did you hear the exciting news announced during Executive Director and CEO Liz’s convention video? Your SIA board decided to count other club projects that increase access to education leading to economic empowerment for women and girls toward our 2021-2031 Big Goal! Clubs have been sharing that they want their community projects that serve our mission to count, and the board listened! More information about how SIA will gather data about these projects will be shared throughout the year.

The Soroptimist International LAB was officially launched during SI’s first ever digital Annual General Meeting, held on Wednesday 29 July. Soroptimist International of Bidwell Rancho helped these two young ladies, with $500 each, to purchase a laptop to be able to start Butte College! Both girls attended our Dream it, Be it program at Fairview High School Chico, CA.
We wish them both the best of luck for their future!

Club Activities

Club Planning Retreat
Members of SI Bidwell Rancho met to plan our upcoming season. We met in person and via Zoom! We are all excited to move forward.
 
A few Members of Soroptimist of Bidwell Rancho met last Sunday morning in beautiful Bidwell Park for the team walk, benefiting the Soroptimist - Sierra Nevada Region's Endowment Fund!

TANGY ORANGE APRICOT JELLO RING

 

INGREDIENTS:

2 16 ounce cans apricot halves

2 3 ounce packages of orange flavored Jello (sugar-free OK)

1 6 ounce can frozen orange juice concentrate

2 tablespoons lemon juice

1 7 ounce can of chilled lemon-lime soda (about 1 cup)

1 dash salt

 

DIRECTIONS:

-Drain apricots, reserving 1 1/2 cups syrup

-Puree apricots in blender

-Heat reserved syrup to boiling; dissolve Jello and add 1 dash salt to syrup

-Add puree, juice concentrate, and lemon juice; stir until concentrate is melted

-Slowly pour lemon-lime soda down the sides of the pan; mix gently

-Pour Jello mixture into 6 1/2 cup  ring or other mold of your choice

-Chill until firm and serve (perfect side dish for any holiday or potluck)

 

MAKES 12-15 SERVINGS

               (My favorite German Fall dish)

Grünkohl (Green Kale & Sausage Stew)

4 bunches of kale
1 lb. bacon, chopped
1 large or 2 medium onions, chopped

6-8 cups chicken, beef, or vegetable stock
2 packages beef or pork kielbasa (14 oz.)
1/2 cup spiced or Dijon mustard
1 cup rolled oats
Baked potatoes for serving

Directions: 

  • Add bacon to a large pot on the stove on medium heat and render until soft but not browned.
  • Add the onion and cook until translucent.
  • Add the chopped kale and chicken stock slowly, alternating with a handful of kale and a slow pour of liquid until all of the kale has cooked down and is in the pot.
  • Add mustard and continue to cook down on low heat, adding more liquid as needed to achieve desired consistency.
  • Check every 10-15 minutes to stir and add more stock.
  • After about an hour on the stove, add the sausage and stir.
  • Continue cooking for another hour, then add oatmeal, stir and cook for an additional ten minutes.
  • Remove from heat.
  • Serve over hot baked potatoes sliced. Add salt and pepper to taste.
